Discover the secrets to perfect pastry in this hands-on cookery class at the Yorkshire Wolds Cookery School. Under the expert guidance of Rosie South, you’ll master a range of pastry-making techniques while creating delicious sweet and savoury classics.  The dishes have been chosen specifically to cover varying pastry making techniques.

In this fun and informative pastry course, you will make:

  • Cornish Pasties – Learn how to make the perfect shortcrust pastry using the rubbing technique. Rosie will also teach you how to use the crimping method to achieve a proper pastie!
  • Coffee Eclairs – Put your pastry skills to the test and make a dainty array of choux pastry éclairs with a decadent sweet coffee flavoured filling.
  • Mini Fruit Tartlets – Make a sweet, light short crust pastry, filled with fruit and your own silky crème pâtissière filling.

Rosie will also demonstrate how to make a proper sausage roll and a traditional Quiche Lorraine, both of which you’ll get to sample for lunch. If time allows you will also get to make flaky puffed up cheddar cheese straws.
